Frittata is such a wonderful choice for breakfast or lunch, so versatile, quick to make and packed full of protein helping to stabilise your blood sugar. This recipe has some lovely veg but you can just see what you have in the fridge and use up what's there, so it is great for using up leftover veg. Just remember for harder veg, cook first before adding the egg mixture.


For lunchboxes, it can be cooked the night before if you are super organised, or quickly made in the morning. If not quite cooled, just add some kitchen paper to your lunchbox to absorb the heat.


You will need a pan that can be transferred from the hob to the stove, it's well worth investing in.

Ingredients

  • 4 eggs

  • 80g grated goats cheese or alternative

  • 1/4 finely grated courgette

  • 1/4 red/orange pepper

  • Sprinkling of herbs de Provence

  • Handful of peas

  • Olive oil or unflavoured coconut oil

Method

  1. Heat 1tsp of olive oil or coconut oil in a oven-proof pan and add the chopped pepper. Cook for 2/3 minutes.

  2. Put on the grill.

  3. Mix the eggs, grated cheese, finely grated courgette and peas together in a mixing bowl.

  4. Add this mixture to the pan and cook for a few minutes until the underside is a light brown.

  5. Move the pan to the grill and cook until the top is firm and is cooked through.

  6. Remove and allow to cool.

  7. Cut into portions to put in a lunchbox or eat immediately.

  8. Have with fresh salad, tomatoes and cucumbers.
